Braidwood chef Tim Wimborne bounces back from bushfire with innovative flavoured pasta

Image
Inside Tim Wimborne's pasta shop in Braidwood in the New South Wales Southern Tablelands, perfectly curved pasta shells are slowly extruded through Italian-made brass dies before being cut off and falling into a mesh tray. Once full, the tray is transferred to a drying rack where it will spend about 80 hours at room temperature. It's a methodical process which the chef says preserves the pasta's nutritional value and means it holds sauce better.  An aged pensioner who feared "losing everything" over an incorrect bill from the Robodebt scheme was forced to make repayments on the debt while she was still contesting it. Rosemary Gay wiped away tears while telling the royal commission into the Robodebt scheme about her "sheer terror" after receiving a debt notice for almost $65,000. Ms Gay said the trauma would "remain with her forever". She told the commission she was living alone, working two days a week and receiving an aged pension when she received a Robodebt bill for $64,998.17 in late September 2016 — due to be repaid in a month. Who wants to buy a grape farm with no income? Flooded farmers find soggy grapes a tough sell

Image
"Who is going to buy a grape farm that has no income for the next 12 months?" That is the problem plaguing grape growers in southern New South Wales, according to Bruno Brombal, who says even if growers wanted to exit the industry it would be a hard sell. This latest challenge comes at a time when many vignerons in the NSW Riverina and parts of South Australia and Victoria have been rain-affected or flooded when they should be gearing up to harvest their fruit. "Some farmers have lost the whole farm, while others have losses of 35 to 50 per cent in some places," said Mr Brombal, chairman of Riverina Winegrape Growers (RWG).
